I have 4 mushy bananas and need to use them soon!

Or…Do you have another recipe that uses overripe bananas?

    Banana Banana Bread

    Ingredients:
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup butter
    3/4 cup brown sugar
    2 eggs, beaten
    2 1/3 cups mashed overripe bananas

    Directions:
    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
    2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
    3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

    Banana Bread Pudding

    Ingredients:
    1 loaf day old Italian or French bread
    3 eggs
    1 scant cup sugar
    1 quart milk or half and half
    1 1/2 tablespoons vanilla
    4 large ripe bananas, mashed
    1/2 teaspoon freshly grated nutmeg
    1 teaspoon cinnamon, divided in half
    1 cup raisins
    1/2 teaspoon fresh, finely grated ginger root
    2 tablespoons dark rum or banana liqueur

    Directions:
    Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes. Stir in 1/2 teaspoon cinnamon and mix well.

    Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour.

    Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices. Mash the bananas and combine all ingredients together.

    Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes).

    Cool and serve with whipped cream.

    Best Ever Banana Bread

    1 cup butter
    2 cups sugar
    3 cups mashed ripe bananas (about 6 bananas)
    4 eggs well beaten
    2 1/2 cups flour
    2 tsp baking soda
    1 tsp salt
    1 tsp nutmeg
    1 1/2 cups frozen blueberries (optional) I sometimes use raisins or walnuts in place of blueberries

    Preheat oven to 350F. Cream butter and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix together dry ingredients and blend with banana mixture, but do not overmix. Fold in blueberries. Pour into 2 lightly greased loaf pan or a bundt pan. Bake 55 minutes to 1 hour or until a toothpick inserted in middle comes out clean. Cool in pans 10 minutes before removing from pan. Freezes beautifully.

    Banana Bread Recipe

    Ingredients
    3 or 4 ripe bananas, smashed
    1/3 cup melted butter
    1 cup sugar (can easily reduce to 3/4 cup)
    1 egg, beaten
    1 teaspoon vanilla
    1 teaspoon baking soda
    Pinch of salt
    1 1/2 cups of all-purpose flour
    Method
    No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
